The clearly nicer route is the way. Therefore, I would rather recommend a round trip on the same route.
Palavas is enough and the ride on the Etang offers less. The return trip on the highway is on bike path, but the way to the river is more beautiful.
Definitely worth seeing: The new architecture on the river with vertical gardens and the skyscraper "white tree"
